I used to work at Cocolat in the San Francisco Bay Area. Alice Medrich was a chocolate guru at the time and her stores were beautiful and the offerings quite delectable. This tricolor mousse was one of my favorites. I have several of Alice’s cookbooks (I know, how old-fashioned, right?) and although I don’t make her crazy-good desserts very often, when I need something special, this is the cookbook I go to first; it was one of her first, and now she has many more.
